Ingredients:

♦4 large bell peppers (any color)

♦1 cup quinoa, rinsed

♦2 cups vegetable broth

♦1 can (15 oz) black beans, drained and rinsed

♦1 cup corn kernels (fresh or frozen)

♦1 cup diced tomatoes

♦1 small onion, finely chopped

♦2 cloves garlic, minced

♦1 teaspoon ground cumin

♦1 teaspoon chili powder

♦Salt and pepper to taste

♦1 cup shredded cheese (optional)

♦Fresh cilantro, chopped (for garnish)

Instructions:

♦Preheat your oven to 375°F (190°C). Grease a baking dish large enough to fit all the bell peppers.

♦Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in the prepared baking dish and set aside.

♦In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and fluffy.

♦In a large skillet, heat some olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

♦Stir in the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.

♦Add the cooked quinoa to the skillet and mix until well combined. Adjust seasoning to taste.

♦Spoon the quinoa mixture into the prepared bell peppers until they are filled to the top. If desired, sprinkle shredded cheese on top of each stuffed pepper.

♦Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

♦Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

♦Remove from the oven and let the stuffed peppers cool for a few minutes before serving. Garnish with chopped cilantro, if desired.
